Flour with power
Great flour! The germ and bran that is left behind from stone ground flour adds a great aroma and flavor. Current milling process bring out the germ and bran, which is sold to farm to feed their livestock. Germ and bran is the most nutritional part of the wheat. The endosperm, which makes for all purpose white flour is the starchy unhealthy part of the wheat. I highly recommend this flour. Wood fired food truck coming soon. It was the only flour available at the time. Stores had empty shelves. Baked a number of loaves of bread using this flour. Excellent. I would buy again.

Mix this with normal high protein flour for New York style pizza and it has a great flavor!!

The product delivered does not match picture/description
Received several weeks back and only opened now. After all it was supposed to be flour... well, first thing, the package does not match the picture. That would be not much of a deal, but the bug problem is that what was delivered is unbleached, whole wheat flour... if so, it should have been CLEARLY indicated as I don’t like my pizza pie to by on rye-like crust... that is deceiving
